Pam's perfect pancakes

Corn pancakes with blueberry syrupI may not have worked on this book, but I wish did because Pam Anderson and I think alike about food. Sure, I appreciate recipes -- I'm a cookbook editor after all. But my idea of a great recipe is a master technique, a recipe which, once learned, can be tweaked and adapted so you can make it your own. As luck would have it, that's what Cook Without a Book: Meatless Meals is all about.Corn pancakesThis "master" recipe is for perfect pancakes, a variation with corn kernels added to the batter. I used my Calphalon Unison non-stick griddle, which I love -- special thanks to the folks at Calphalon for donating these to attendees at Eat Write Retreat. I'd never owned a griddle pan before, and now I'm not sure how I lived without it.Corn pancakesOf course the pancakes cooked up beautifully. The blueberry syrup "recipe" is easy enough to whip up in minutes -- just simmer some fresh blueberries in corn syrup while you make the pancake batter. Now that I know how simple it is to make my own fruity syrup, I'm hooked. What's most interesting to me is that I'd never think to pair corn with blueberries, but they go together beautifully. Now I can't wait to try more recipes from Pam's new book.
