toasted marshmallows

Toasted Marshmallow ShakeYou still have a chance to enter the drawing for a copy of The Good Stuff Cookbook by Top Chef contestant and D.C. chef Spike Mendelsohn. Maybe you caught him on Good Morning America on Memorial Day making his famous Obama Burger. I just whipped up a batch of his equally famous Toasted Marshmallow Shake. The recipe is in the book, and here's how it goes...Toasted Marshmallow ShakeFirst you toast a whole bag of marshmallows under the broiler (put four aside for garnish first). Broil until nice and charred -- stirring once or twice -- this takes 2 to 3 minutes, but keep an eye out so they don't burn. The marshmallows will be like liquid when you remove them from the oven, but once you touch them with a spoon or spatula, they'll start cooling down pretty fast. I suggest scooping them into a blender as soon as possible. Then toast those four reserved marshmallows for garnish. I did that over the gas burner, but you should be careful of course.Toasted Marshmallow ShakeBlend the toasted marshmallows with 2 cups milk, 2 cups vanilla ice cream, and tablespoon of sour cream. Spike says that takes 5 minutes in the book, but I think the timing will depend on your blender.Toasted Marshmallow ShakeThen garnish with the toasted marshmallows. (It should make 4 servings, but it seemed more like 3 to me!)Toasted Marshmallow ShakeThis is a breeze, and if you're a fan of toasting marshmallows over the campfire, then you might fall in love at first taste of this super-sweet shake.
